Last night was busy in the SA household!

Last night when I got home from work I started cooking and didn't stop until I went to bed (except for an hour break for Zumba)!

I started off by trying out the bread maker I got for Christmas. My mom bought be a mini Zo and I am officially in LOVE! For my first loaf I made an Italian Herb Mix that I got at Williams Sonoma:


I don't have any pictures of the final product *blogger fail* but I can assure you it is delicious. While nothing compares to homemade bread, a mix might be the second best thing. I am going to buy some bread flour this weekend, let the experimentation begin!

**Insert Zumba Break**

After Zumba I just had a ton of energy, which was strange for me, so I took full advantage of it.

First up on my list was Mmm Sauce from Peas and Thank You. Everyone raves about this sauce so I thought since I had the ingredients I might as well make some. Well, the masses were right, this stuff is delicious! What is nice about it is that you can use it on pretty much anything. Today it's salad dressing, tonight it's on pasta. I love the concept of anything that takes the thinking out of food. Kudos Mama Pea!

The second thing on my list of what to cook were Tempeh Croutons. I've never had Tempeh before and to be honest, it's kind of freaky. I hold to the practice of "If it's not meat I'll at least try it." Well, the jury is still out, I'm not sure I love it, but it's ok. However, Leanne (awesome name, huh?) from Healthful Pursuit posted an awesome recipe for Lemon Pepper Tempeh Croutons which was pretty delicious and really easy to make!

The last thing on my list was Salt and Vinegar Roasted Chickpeas from Oh She Glows. After making the Mmm Sauce, I had most of a can of chickpeas leftover and I saw this recipe so I figured I would give it a whirl. Turns out, they're amazing. I have tried a few recipes from Angela and none have disappointed. If you like Salt and Vinegar chips (and I do), try these babies out. Perfect salad topper.

All of last nights endeavours have suddenly turned into:


LUNCH!

I topped some baby romaine lettuce with a baby cucumber, tomatoes, tempeh croutons, chickpeas, and sliced Tofurkey (also new to my palate) with a side of Mmm Sauce for dressing. 

I am pretty excited for dinner too! Gourmet grilled cheese (plan is to make it with my homemade bread) and butternut squash soup (recipe to come!).

I also need to do a shameless plug for my Ninja (ninjahhhh) Blender. It might be this single best kitchen purchase I have ever made. I bought it through QVC for $50 and it comes with 4 containers of different sizes, the power pod, and lids for the containers. I made both the Mmm sauce and the tempeh marinade with it. It also makes a killer smoothie and great shaved ice. *Shameless plug, over.*
