Tasty Thursday: Blueberry Muffins

These aren't just any ordinary blueberry muffins, these are my MOM's blueberry muffins. I remember waking up in the bright summer mornings, the house smelling of blueberries and sugar. Those days were the best! I thought that with the weather getting warmer super hot, this would be the perfect Friday morning breakfast at the office.

They were just as awesome as I remember.

Muffins:
3/4 cup sugar
1/4 cup shortening
1 egg
3/4 cup milk
2 cups flour
2-1/2 tsp baking powder
2 cups fresh blueberries
1 tbsp cinnamon

Topping:
1 cup sugar
2/3 cup flour
1 tbsp cinnamon
1/2 cup butter

Combing the topping ingredients with a pastry cutter or fork until butter is combined into pea sized chunks.

Blend shortening, sugar, egg, and milk. Add flour, baking powder, and cinnamon, mix until combined. Gently stir in blueberries.. Put into muffin tins lined with muffin papers and sprinkle with topping.

Regular sized muffins: bake at 400 degrees for 20 minutes (makes 18)
Large muffins: bake at 375 degrees for 30 minutes (makes about 12 muffins)

  1. I love muffins and especially blueberry or banana. I am due to make some actually and these look amazing! Also you can put cinnamon crumble topping on just about anything and it becomes 10000 x's more delicious.
